Preheat oven to 350°F. Line cookie sheet with parchment paper (or lightly grease); set aside.
In a medium bowl add the melted and cooled coconut oil, the egg and vanilla. Whisk until smooth and creamy.
Add coconut flour, oat flour, sugar, baking soda and salt and mix well.
Stir in the chocolate chips.
Using a cookie scoop or spoon, drop dough by tablespoonfuls onto the cookie sheet about 2 inches apart.
Bake at 350°F for 7-8 minutes or until lightly browned. Allow cookies to cool about 5 minutes on the cookie sheet then remove to a wire rack to cool completely.
