1 cup | Rolled oats, dry |
1 cup | Greek yogurt, plain, 5% M.F., Liberte |
3 large | Egg |
1 tsp | Cinnamon |
1 tsp | Vanilla extract, pure |
1 dash | Salt |
2 tbsp | Agave nectar (syrup) (can sub honey, maple syrup, sucunat, or coconut sugar) |
1 tsp | Baking powder |
1 tbsp | Coconut oil (or butter or oil of choice) |
Put all ingredients in the blender and blend until very smooth.
Heat a pan with about 1 tablespoon of coconut oil.
Pour a small amount of batter into the pan. Cook about 4-5 minutes on the first side and 2-3 minutes on the second side.
Repeat until all the batter is gone (or cook them all on one large griddle)
