Ingredients


10 date pitted Medjool date
1/4 cup Oats, dry
2 tbsp hulled Hemp seeds, shelled
1/4 cup Walnuts (chopped)
2 tbsp Water, filtered

Instructions


Soak the pitted dates in warm water for about 10-15 minutes to soften.

Add the dates and 2 tbsp of water to food processor and pulse to a paste.

Mix the dates, oats and hemp seeds together in a bowl until well blended, and refrigerate for about 20 minutes to stiffen slightly.

Form about 1 tbsp of the mix into a ball and roll in the chopped walnuts (makes about 10).  Repeat with remaining mix and store in the fridge or freezer.



Notes:

Dates are rich in fibre, and also contain protein, potassium, magnesium, copper, manganese, iron, and vitamin B6.

Hemp seeds are a great source of protein and healthy omega-3 fatty acids.
