Prepare an “assembly line” – flour, beaten eggs and bread crumbs. Cut the fish fillets into 3 inch pieces each and season them with salt and pepper.
One by one, coat the fish fillets in flour, dip in the egg mixture to coat them and then cover them in bread crumbs. Here is the prepared product before frying.
You can fry the fish fingers in olive oil, but you can also spray them with oil and bake them in the oven for 10-12 minutes at 3508F.
