2/3 cup Raspberries (pureed)
1/3 cup Raspberry juice (or other juice)
5 tsp Gelatin dry powder, unsweetened
2 tbsp Monk Fruit in The Raw Natural Sweetener (or other sweetener of choice- powdered is best for texture)

Instructions


  1. Put juice into small saucepan and add gelatin. 
  2. Gently heat while stirring until gelatin is dissolved.
  3. Add this to the fruit puree. Taste and add a bit of Swerve or Monkfruit sweetener if desired.
  4. Pour into silicone molds or into an 8 x 8 pan.
  5. Place in fridge for 20-30 minutes until firm.
  6. Optional Sour Coating: Mix 4 packages of lemon powder with 2 tbsp of Swerve and toss the finished gummies in the powder.

Notes:

The product I use to make these sour gummies is called True Lemon/True Lime which is essentially powdered juice with no added sugar. They are meant to be added to water in place of fresh lemon or lime, if you don't have that available.
