5 halves Apricot, dried
454 gm Pork, sirloin (boneless), lean
1/2 cup Balsamic vinegar
3 clove(s) Garlic (peeled)
1 tsp Paprika, smoked
1/2 tsp Salt
1 large Red onion (diced)
1 can(s) (16 oz) Tomato sauce, canned

Instructions


  1. In a medium bowl add diced onions, garlic cloves, tomato sauce, balsamic vinegar, smoked paprika, salt, and apricots. Gently mix together.
  2. Add pork loin to bottom of crock pot, pour balsamic mixture over pork. Cook on HIGH for 4-5 hours.
  3. Shred pork using two forks, leave pork in sauce.
