2 1/4 kg Beef brisket (cut into large peices)
2 large potato Sweet potato (cut into chunks)
3 medium Yellow onion (sliced)
1 pinch Sea Salt (to taste)
1 dash Garlic powder (to taste)
1 tsp Onion powder (to taste)
2 cup Beef broth (stock)
1/3 cup Apple cider vinegar
1 sprig Thyme, fresh (to taste)
1 tbsp Olive Oil, Extra Virgin

Instructions


  • Cut brisket into large chunks and liberally coat with salt, pepper, garlic, and onion powder.
  • Drizzle the bottom of the Instapot pot with olive oil, followed by the sweet potato chunks, sliced onions, and fresh thyme.
  • Lastly, place the brisket over the sweet potato and onion, pour in the beef broth and sherry vinegar.
  • Turn your Instapot on and set for 1 1/2 hours. - 3 hrs.
  • Once cooked, release the pressure and serve as desired.
