1. Cook the quinoa according to package directions (oil free).
2. Cook ahead of time or the night before and place in fridge to allow the quinoa time to get cold.
3. Mix the greens together in a large bowl.
4. Dice up the cucumber, bell peppers, and tomatoes and add them to the salad.
5. Add the cold quinoa to the salad and mix everything together.
6. Top with approved dressing. Enjoy :)
