400 gm Cauliflower (washed and broken into florets)
2 tbsp Butter, grass fed, unsalted (melted)
1 tbsp Heavy cream, 38% M.F. (tbsp)
100 gm Cheddar cheese (shredded)
1/4 tsp Cayenne pepper
1/4 tsp Himalayan salt
2 tbsp Butter, grass fed, unsalted
1 medium leek(s) Leek (chopped)
2 clove(s) Garlic (minced)
250 ml Bone broth, Organic
60 ml Heavy cream, 38% M.F.
2 medium slice Bacon (chopped)
3 leaf Bay leaf (dried)
1/4 tsp Cayenne pepper
1/4 tsp Himalayan salt
1 tbsp Parsley, fresh (chopped)
1 tsp Dijon mustard
250 gm Atlantic Cod
250 gm Atlantic salmon, wild
200 gm Shrimp, raw
1/2 whole lemon(s) Lemon juice (freshly squeezed)

Instructions


Instructions: Creamy Mash Topping

  1. First, prepare the Cheesy Creamy Cauliflower Mash and set aside.

  2. Break the head of cauliflower into florets and place in a microwavable bowl with the cream and butter.

  3. Microwave on high for 10-12 minutes. Make sure to keep re-coating the cauliflower in the butter and cream during this time.

  4. Once finished, pop into a high-powered food processor with half of the grated cheese, salt and cayenne pepper. Process until smooth and no lumps. Season to your taste.

 

Instructions: Fish Pie

  1. Pre-heat the oven to 180°C (350°F) 

  2. In a medium saucepan over medium heat add the butter and sauté the chopped leek with the minced garlic for a few minutes until softened, keep stirring as not to let the garlic burn. Pour in the bone broth and add the bay leaves, salt and cayenne pepper, cook for about 5 minutes.

  3. Add in the chopped bacon, dijon mustard and cream, allow to simmer for 5 minutes until the bacon is cooked through. 

  4. Then add the fish, shrimp and chopped fresh parsley and the lemon juice and simmer gently for a further 2-3 minutes allowing the fish to cook slightly but not too much before we bake the pie.

  5. Pour the fish pie filling into a medium sized casserole dish and make sure the fish is distributed evenly. Using a spoon, top the pie with the Cheesy Creamy Cauliflower Mash, evenly spreading it out to cover the casserole dish and use a fork to fluff the mash. Sprinkle with the remaining shredded cheese.

  6. Bake for 10 minutes & voila! Enjoy.
