Apple, Cheddar and Kale Salad

Made with fresh kale leaves, crisp apples, crunchy pumpkin seeds, cheddar cheese, and rotisserie chicken - this hearty salad is perfect for the fall season.

Ingredients


1 tsp Dijon mustard
1 tsp Honey
2 tbsp Sherry vinegar
1/4 cup Olive Oil, Extra Virgin (extra-virgin)
1/4 tsp Salt (to taste)
1/4 tsp Black pepper (to taste)
1 bunch Kale (stems removed and torn into bite-size pieces)
1 1/2 cup slices Apple (cut into matchsticks)
3/4 cup Cheddar cheese (or cheese of choice, shredded)
1 1/2 cup Rotisserie chicken breast, skinless (cut into bite-sized pieces)
1/2 cup Pumpkin seeds (pepitas) (or seed/nut of choice)

Instructions


Step 1: In a small bowl, whisk together Dijon mustard, honey, and sherry vinegar. Slowly add olive oil, whisking constantly. Season with salt and pepper. 

Step 2: In a large bowl, toss kale pieces with dressing prepared in Step 1. Using your hands, massage the kale with the dressing until tender (approximately 3 minutes). 

Step 3: Toss in the apple matchsticks, shredded cheddar cheese, and chicken. 

Step 4: Garnish salad with pumpkin seeds, or seed/nut of choice, and serve.

Notes:

Tip: 

Add a sprinkle of dried cranberries for added color, flavor and texture!
