1 bunch | Kale (stems removed and torn into bite-size pieces) |
1 1/2 cup slices | Apple (cut into matchsticks) |
3/4 cup | Cheddar cheese (or cheese of choice, shredded) |
1 1/2 cup | Rotisserie chicken breast, skinless (cut into bite-sized pieces) |
1/2 cup | Pumpkin seeds (pepitas) (or seed/nut of choice) |
Step 1: In a small bowl, whisk together Dijon mustard, honey, and sherry vinegar. Slowly add olive oil, whisking constantly. Season with salt and pepper.
Step 2: In a large bowl, toss kale pieces with dressing prepared in Step 1. Using your hands, massage the kale with the dressing until tender (approximately 3 minutes).
Step 3: Toss in the apple matchsticks, shredded cheddar cheese, and chicken.
Step 4: Garnish salad with pumpkin seeds, or seed/nut of choice, and serve.
Tip:
Add a sprinkle of dried cranberries for added color, flavor and texture!
