Rolled oats, dry
(buy gluten-free oats if desired)

Coconut milk, sweetened
(or any nut milk)

Chia seeds, ground
(optional)
1/2 cup
Frozen raspberries
1/2 medium
Banana (s)
(sliced)
1/2 medium
Apple
(chopped)
1/4 cup
Sunflower seeds
(any mixed nuts or seeds (optional))
1 tsp
Cinnamon
1 tbsp
Almond butter
(drizzled (optional))
1 tsp
Honey, raw
Instructions
Place all ingredients in large container, stir or shake vigorously and let sit overnight in fridge.
In the morning, preheat oven (or toaster oven) to 400F.
Lightly grease casserole dish with coconut oil.
In mixing bowl, combine 2 cups overnight oats with frozen berries, sliced banana, favourite nuts or seeds, cinnamon and apple (or whatever combination of fruits and nuts that floats your boat).
Pour into casserole dish and bake 20-30 minutes (while you go get ready for the day) until golden on top.
Spoon into bowls and drizzle nut butter and raw honey on top and enjoy!
Notes:
This recipe needs to made the night before, requiring 8 hours to set.
