Loaded Turkey and Veggie Pasta

This homemade spaghetti sauce recipe is lightened up with turkey, but is so flavorful you'd never know it!

Ingredients


375 gm Pasta, whole wheat, dry (or one box)
1 tbsp Olive Oil, Extra Virgin
1 large Yellow onion (chopped; about 1 1/2 cups)
1/2 tbsp Garlic (minced)
681 gm Ground turkey, extra lean
1 medium pepper(s) Green bell pepper (seeded and chopped)
1 medium pepper(s) Red bell pepper (seeded and chopped)
1 medium Zucchini (sliced and quartered)
1 package, sliced (8 oz) White mushrooms
1/2 tsp Black pepper
1 can(28oz) Crushed tomatoes canned (low sodium)
1 can(s) (28oz) Diced tomatoes, low sodium, canned (low sodium)
1 can(s) (15oz) Tomato sauce, canned (low sodium)
2 small can Tomato paste, canned (low sodium)
2 leaf Bay leaf
1/4 cup Basil, fresh
2 tsp Oregano, fresh (or 1 tsp. dried; chopped)
1/4 cup Parsley, fresh (chopped)

Instructions


  1. Cook pasta as per package instructions.
  2. Heat oil in a large pot over medium heat. Add the onion and garlic and cook for 2 - 3 minutes to soften.
  3. Meanwhile, add the ground turkey to a non-stick skillet and cook while breaking into small pieces with a spatula. While turkey is browning, add salt, pepper.
  4. Add the green and red pepper, zucchini, and mushrooms to the large pot with the onion mixture. Stir to combine and cook until the vegetables begin to soften.
  5. When the ground turkey has finished cooking, add it to the pot with the vegetables.
  6. Add the crushed tomatoes, stewed tomatoes, tomato sauce, tomato paste, and bay leaves. Bring to a boil then reduce heat to low and let simmer uncovered for 30 minutes stirring occasionally. 
  7. During the last 15 minutes of cooking time, add chopped fresh herbs. 
  8. Serve sauce over pasta and garnish with additional chopped parsley and parmesan cheese, if desired.

Notes:

If the sauce is too acidic, add sugar to taste during the cooking process (about 1/2 Tbsp should do the trick).

    This was very delicious! I used grain fed organic ground beef instead of turkey, and didnt have mushrooms, so doubled the zucchini. Used Rotel instead of diced tomatoes and it gave it some good spice!
