Ingredients


3 cup shredded Mozzarella cheese
4 tbsp Cream cheese
1 cup Almond flour/meal, Bob's Red Mill
1/2 cup Flaxseed meal (ground)
2 tsp Xanthan gum (optional: it's there for texture)
2 large Egg (room temperature)
2 tsp Yeast, active dry (approximately 1 sachet- this is for flavour so can be omitted if needed)
3 tbsp Water (warm (you can use a bit more if you need to) I sometimes add a pinch of sugar to feed the yeast but that's optional)
2 tbsp Olive Oil, Extra Virgin (or melted butter)

Instructions


  1. Preheat oven to 350.
  2. In a microwave-safe dish, place the mozzarella cheese and cream cheese and microwave in 30 sec increments, stirring in between, until fully melted and almost liquid.
  3. Dissolve the yeast in the warm water and allow it to sit and activate for 2 minutes.
  4. In your stand mixer (using the dough hook attachment), place the almond meal and xanthum gum and mix well.
  5. Add the eggs, yeast mixture and 1 tablespoon of the melted butter and mix well.
  6. Add the hot melted cheese to the stand mixer and allow it to knead the dough until all the ingredients are fully combined. Around 5 minutes.
  7. Let the dough sit for 10 minutes if you have the time to wait. It will be easier to handle once the flaxseed has had a chance to absorb the liquid.
  8. Split the dough into 12 balls. NOTE: dip hands in warm water to make it easier to shape dough without sticking! 
  9. Roll and shape each ball into stick, bagel or pretzel. Place on a lined cookie sheet and leave space between as they will rise.
  10. Brush the dough with the remaining butter and sprinkle with salt, sesame seeds or other seasonings if you wish (optional).
  11. Bake in the oven for 12-15 minutes.
  12. When the bagels/pretzels/breadsticks are golden brown, remove them from the oven.

Note: If you've made bagels, you can slice and toast them just like regular bagels. Net Carbs per Serving: 2.1 grams
