Ingredients


3 large Egg
1/2 cup Whole Milk Yogurt, plain
1 tbsp Swerve Sweetener, confectioners (or other zero calorie sweetener)
1 tsp Baking powder
1/4 cup Almond Flour
1/2 tsp Vanilla extract, pure
2 tbsp Butter, unsalted

Instructions


  1. Preheat oven to 425 degrees.
  2. Mix the first 6 ingredients together in a bowl or blender.
  3. Put butter in oven-proof pan (10 inch cast iron pan or a baking pan).
  4. Place pan with butter on stove and heat butter. Swirl the butter around the pan.
  5. Once the butter is bubbling, pour in the pancake batter.
  6. Bake in oven for 15 minutes or until puffed and golden.
  7. Serve with more butter, a sprinkle of cinnamon and a bit of sugar-free syrup or fresh fruit and whipped cream.
