This one-pan meal is low-carb, healthy, and packed full of flavour. Not to mention, this dish is great for meal prep too!
Ingredients
3 cup
Butternut squash
(cubed)
2 1/2 cup
Broccoli florets
1 large pepper(s)
Red bell pepper
(cut into large strips)
2 tbsp
Extra virgin olive oil
1/4 tsp
Salt and pepper
(each or to taste)
4 link
Italian sausage, turkey
(nitrate-free; cut into 1/2 inch slices)
Instructions
Preheat the oven to 400°F (204°C).
Line a baking sheet with parchment paper.
Place butternut squash, broccoli, bell pepper, and onion in a bowl, and toss with olive oil. Season with salt, pepper and any additional desired seasonings or herbs.
Spread out vegetables in one layer on a large roasting pan. Arrange sausage in and around vegetables.
Roast 25 minutes, until the sausage is just browned and cooked through (internal temperature 160°F or 71°C).
Remove the sheet pan from the oven and top with roasted red pepper flakes (optional.
Serve immediately.
