Low Carb Sheet Pan Chicken Fajitas

Ingredients


1 small pepper(s) Green bell pepper
1 small pepper(s) Red bell pepper
1 small pepper(s) Yellow bell pepper
1/2 medium White onion (thinly sliced)
1/4 cup Olive Oil, Extra Virgin (divided)
1 pinch Salt and pepper (sea salt)
681 gm Chicken thighs, boneless, skinless
3 tbsp Taco seasoning mix, McCormick (or Simply Organic taco seasoning)

Instructions


  1. Preheat oven to 400·F.
  2. Cut the peppers and onions into thin slices and spread out on a rimmed baking sheet. Drizzle with 2 tablespoons of the oil and sprinkle with salt and pepper.
  3. Toss to combine and then spread out again.
  4. Slice the chicken thighs into thin strips. In a medium bowl, toss with the remaining oil and the taco seasoning. Arrange slices overtop the vegetables.
  5. Bake 20 to 25 minutes, until chicken is cooked through. Serve with cauliflower rice .
