1. This smoothie does require a few minutes of prep work, steaming then freezing zucchini. I usually prepare a few zucchini at a time, to have handy and ready in my freezer throughout the busy workweek. To steam your zucchini, dice zucchini into bite size cubes. Fill a medium sized pot with just enough water to coat the bottom, then bring water to a boil over medium-high heat (this will happen very quickly). Put zucchini in pot, reduce heat to low, and cover. Simmer for 10-12 minutes, or until zucchini are JUST fork tender. Allow zucchini to cool to room temperature, then transfer to a storage bag or Tupperware. Freeze until ready to use!
2.n a high speed blender, whiz all ingredients until smoothie is very smooth – because of the raw greens and nuts, this can take up to 60 seconds. Pour into your favorite glass or tumbler, serve immediately, and enjoy!
