1/2 pepper(s) | Red chili pepper (also chile or chilli) (finely sliced) |
1 1/3 kg | Broccoli, raw |
3 tbsp | Extra virgin olive oil |
1/4 cup | Cashew nuts, salted (chopped) |
1. Prepare Sauce:
Whisk maple syrup with fish sauce, cider vinegar and chiles. Set aside.
2. Bake and Dress Broccoli:
Arrange rack in lower third of oven. Preheat to 500 degrees F.
3. Leaving broccoli intact, peel stalks and trim fry ends. Quarter each stalk vertically, forming long thin “trees”.
4. Spread on large baking sheet. Brush with olive oil. Bake 15 minutes or until bottom of broccoli is dark brown. Flip and cook 5 minutes or until crisp-tender.
5. Remove from oven and pour maple sauce over broccoli in pan. Sauce will sizzle. Roll broccoli in sauce. Transfer to platter.
6. Pour sauce over top. Sprinkle with cashews.
