These tender carrots get kicked up a notch with a sweet maple-orange glaze.
Ingredients
12 medium
Carrots
(peel and slice into 1/4 inch pieces)
2 tbsp
Extra virgin olive oil
2 tbsp
Orange juice
1/2 whole orange(s)
Orange peel (zest)
1 tsp
Sea Salt
2 tsp
Nutmeg, ground
2 tbsp
Apple juice
1 tbsp
Maple syrup, pure
Instructions
Place carrots in a covered vegetable steamer over boiling water for 10 minutes or until they are tender. Remove from heat, strain, and set aside.
Heat the oil in a large saucepan. Add orange juice, orange zest, steamed carrots, salt, nutmeg, and apple juice. Stir to coat and cook until heated through. Remove from heat and add maple syrup, mixing well.
