1 1/3 kg | Beef, sirloin tip (4 steaks dehydrated for 15 hours at 160 then ground into powder) |
6 tbsp | Honey |
2 3/4 tbsp | beef tallow |
1 tsp | Sea Salt |
Slice partially frozen beef into very thin strips and dehydrate at 160 degrees for 15 hours.
When cool, grind in blendtec or Vitamix until thoroughly powdered.
Transfer to a bowl and add colostrum and salt mixing until thoroughly incorporated. In a saucepan add tallow, honey, maple syrup and mix until fully liquified. Add to dry meat mix and blend until you reach a consistent texture.
Press into desired mold and freeze briefly until firm enough to vacuum seal or wrap.
With top sirloin roast approx. 3.5 lbs
