Ingredients


1 1/3 kg Beef, sirloin tip (4 steaks dehydrated for 15 hours at 160 then ground into powder)
6 tbsp Honey
2 3/4 tbsp beef tallow
1 tsp Sea Salt

Instructions


Slice partially frozen beef into very thin strips and dehydrate at 160 degrees for 15 hours.

When cool, grind in blendtec or Vitamix until thoroughly powdered.

Transfer to a bowl and add colostrum and salt mixing until thoroughly incorporated. In a saucepan add tallow, honey, maple syrup and mix until fully liquified. Add to dry meat mix and blend until you reach a consistent texture.

Press into desired mold and freeze briefly until firm enough to vacuum seal or wrap.


Notes:

With top sirloin roast approx. 3.5 lbs

4 tbps honey

3 tbsp maple syrup

5 tbsp colostrum

6.5 tbsp tallow

1 tsp sea salt

With Top Round Roast approximately 5 lbs

added 2 tbsp colostrum

3 tbsp maple syrup

1 1/2 cup  tallow 

in addition to original recipe amounts above.

Made 12 meat pucks

With Cross Rib Roast approximately 5 lbs

4 tbsp honey

3 tbsp maple syrup

3 scoops Colostrum

1 1/2 cup tallow

1 1/2 tsp course grey sea salt
