1. Start by preparing the tahini sauce; combine tahini, parsley, lime juice, water, and sea salt. Give this a good stir until evenly combined and smooth.
2. To assemble, spread 1 tbsp of baba ganoush onto each slice of bread. Layer on the avocado slices then drizzle with the tahini sauce. Top with the second slice of bread.
Serve immediately and add desired toppings such as hemp hearts or pumpkin seeds if desired!
