Ingredients


2 tbsp Tomato paste, canned (Tbsp)
1/4 cup Extra virgin olive oil
1 tbsp Garlic (H-E-B Peeled Garlic Cloves minced or zested)
1 tsp Cumin
1/2 cup Vegetable stock/broth, low sodium (H-E-B Organics Veggie Stock or Broth)
1/2 cup White onion (sliced)
1/3 cup Cilantro (coriander) (fresh; chopped fine)
454 gm Cauliflower crumbles/rice (Cece's Veggie Noodle Co. Riced Cauliflower)

Instructions


  1. Place a non-stick sauté pan over medium-heat. Add oil and allow to get hot before adding onions and garlic.
  2. Sweat onions and garlic for 3 to 4 minutes, then add cauliflower rice, tomato paste and cumin. Stir fry everything to combine before adding stock.
  3. Add stock and cook until stock is completely evaporated. Season to taste as needed and garnish with fresh chopped cilantro.
