Ingredients


3 large pita Pita bread, whole-wheat
4 tsp Olive Oil, Extra Virgin ((divided use))
1 cup Hummus (homemade or store bought))
1 cup Tzatziki sauce (homemade or store bought))
3/4 cup Olives (mixed)
1 cup Cherry Tomatoes
1 cup Cucumber (English, sliced)
8 leaf Grape leaves (vine leaves) (stuffed; homemade or store bought))
3/4 cup Feta cheese (cubed)
1 cup Artichoke, raw (grilled or roasted artichokes))
1/2 cup slices Zucchini (grilled or roasted)
1 large pepper(s) Red bell pepper (sliced; grilled or roasted)
1 eggplant Eggplant (sliced; grilled or roasted)
3 sprig Parsley, fresh (for garnish)

Instructions


  1. Brush 2 teaspoons of olive oil over both sides of the pita bread. Heat the pita bread in a 400 degrees F or on a grill for 3-5 minutes or until warmed through. Cut each pita into eighths.
  2. Start by placing your bowls of hummus, tzatziki, and olives.
  3. Add the pita, cucumber slices, and cherry tomatoes around the perimeter of the platter.
  4. Fill in the gaps around the bowls with the stuffed grape leaves, feta, and roasted/grilled vegetables. 
  5. Drizzle the remaining 2 teaspoons of olive oil over the hummus and tzatziki. Garnish the platter with fresh parsley or cilantro, then serve.
