This mezze platter is a simple yet impressive offering that always gets rave reviews!

Pita bread, whole-wheat

Tzatziki sauce
(homemade or store bought))

Grape leaves (vine leaves)
(stuffed; homemade or store bought))
3/4 cup
Feta cheese
(cubed)

Artichoke, raw
(grilled or roasted artichokes))
1/2 cup slices
Zucchini
(grilled or roasted)
1 large pepper(s)
Red bell pepper
(sliced; grilled or roasted)
1 eggplant
Eggplant

Instructions
Brush 2 teaspoons of olive oil over both sides of the pita bread. Heat the pita bread in a 400 degrees F or on a grill for 3-5 minutes or until warmed through. Cut each pita into eighths.
Start by placing your bowls of hummus, tzatziki, and olives.
Add the pita, cucumber slices, and cherry tomatoes around the perimeter of the platter.
Fill in the gaps around the bowls with the stuffed grape leaves, feta, and roasted/grilled vegetables.
Drizzle the remaining 2 teaspoons of olive oil over the hummus and tzatziki. Garnish the platter with fresh parsley or cilantro, then serve.
