Potatoes, sweet potatoes, and zucchini are thinly sliced with a mandoline and baked to make a healthier snack alternative to chips. YUM!
Ingredients

Buttermilk powder
1/2 tbsp
Kosher salt
(to taste)

Onion powder
2 tbsp
Parmesan cheese, grated
1 potato
Potato
(thinly sliced)
1 medium potato
Sweet potato
(thinly sliced)
1 medium
Zucchini
(thinly sliced)
3 spray (about 1/3 second)
Olive oil cooking spray
1 tbsp
Chives
(chopped, optional)
Instructions
To make the seasoning, mix the powdered buttermilk, kosher salt, onion powder, and Parmesan in a medium-sized bowl.
Place vegetables onto a parchment-lined microwave-safe plate. Each vegetable should have a separate plate (zucchini on one plate, sweet potato on the other, etc.).
Lightly spray the vegetable chips with oil and sprinkle seasoning and chives over top.
Microwave on high for 4-6 minutes or until the veggies have started to brown. Wait until they brown a little or they will not crisp up, but be careful not to over-brown or burn. Repeat with each vegetable until all have been cooked.
These can be eaten right away or stored for a day in an airtight container.
