1 cup | Mung beans, boiled, canned (rinsed and drained) |
1/3 cup | Cocoa powder, unsweetened |

1/3 cup | Coconut oil |
1/4 cup | Maple syrup, pure |
1 tsp | Vanilla extract, pure |
1 pinch | Himalayan sea salt |
2/3 cup | Rice flour, brown |
1/2 cup | Dark chocolate chips |
Preheat oven to 350F.
In a food processor, add in cooked mung beans, cocoa, eggs, coconut oil, maple syrup, vanilla and salt. Pulse until smooth and well combined. Transfer this mixture to a medium bowl and add the rice flour. Stir until batter is well combined
Oil an 8-10 inch cast iron skillet with coconut oil or an oil of your choice
Pour half of the batter into the skillet, sprinkle chocolate chips and then cover with the other half of the batter
Bake for 20 minutes
