1 naan, small | Naan (whole wheat) |
2 tbsp | Basil pesto (store-bought or homemade, optional, can also use tomato sauce) |
80 gm | Chicken breast, boneless, skinless |
1/4 cup | Broccoli florets (chopped) |
1/4 cup | Red onion (diced) |
2 tbsp | Sun-dried tomatoes (sliced) |
2 tbsp | Feta cheese |
Preheat oven to 425F.
Spread pesto evenly on the naan bread. Top with all of ingredients except the nutritional yeast.
Bake for 12 to 15 minutes until heated through.
Remove from oven, sprinkle with the nutritional yeast, and enjoy!
This recipe is for one vegetarian personal size pizza, but can easily be multiplied and modified for additional servings. Get creative and add any of your other favourite ingredients such as chicken, turkey pepperoni, bell peppers, olives, mushrooms, spinach, etc. Other types of sauce (traditional pizza sauce, alfredo sauce) and cheeses (mozzarella, goat cheese, ricotta) can also be used.
Chickpeas are a great source of plant-based protein, fibre, potassium, magnesium, iron, calcium, and vitamin B6. If you do not like chickpeas, add another source of protein such as chicken.
Nutritional yeast is a great source of B vitamins when enjoying a meatless meal.
This meal is perfect for an at-home lunch, but can also be prepared the night before, packed up, and enjoyed as a cold pizza lunch the next day.
