Energy balls are a great on-the-go snack option; they are both hearty and delicious!
Ingredients
1 cup
Quick oats
1 cup
Coconut, shredded, unsweetened
1/3 cup
Flaxseed meal (ground)
1 tsp
Cinnamon
1/3 cup
Maple syrup
(or honey)
1 tsp
Vanilla extract, pure
1/2 cup
Peanut butter, smooth
(or nut or seed butter of choice)
1/2 cup
Dark chocolate chips
Instructions
Line a medium-sized baking sheet with parchment paper and set it aside.
In a medium-sized mixing bowl combine the oats, coconut, ground flax meal, and cinnamon.
Stir in the nut/seed butter, maple syrup, and vanilla extract. Then, carefully fold in the chocolate chips.
ALTERNATIVELY:
Add the oats and flax meal (ground flax) to a food processor and process until they reach a flour-like consistency.
Then, add the remaining ingredients to the food processor and continue to process until a batter is formed.
Roll the batter into balls (approx. 1 inch in diameter), place on the lined baking sheet, and refrigerate or freeze for at least 1 hour before serving.
Once cooled to a solid state, transfer the energy balls to an air-tight container and store them in the fridge.
