The easiest, most delicious, no-fuss tomato salad.
Ingredients

Arugula
(spinach or watercress work well)
|
1/3 beet(s)

Beets, boiled, drained
(large)
|

Sun-dried tomatoes
|
150 gm
|
Cherry Tomatoes
(multicoloured)

Pumpkin seeds (pepitas)

Instructions
- Slice the cherry tomatoes in half and cut up the beetroot into chunks.
- Lay your salad on the plate before adding all of the tomatoes, beetroot and pumpkin seeds.
- Drizzle over the olive oil and serve with crusty gluten-free bread, if you like.
Notes:
1/6 of a large beet contains moderate amounts of oligos. Limit intake.
