No Grain Flax and Sesame Bread

Ingredients


1 1/2 cup Flaxseed meal (ground) (you can grind your own in a blender)
1/2 cup Sesame seeds (ground- just grind whole seeds in your blender)
1 tbsp Baking powder
3/4 tsp Salt
5 large Egg (room temp)
1/2 cup Water (room temp)
1/3 cup Olive Oil, Extra Virgin

Instructions


  1. Preheat oven to 350F. Line loaf pan with parchment paper.
  2. In a medium size bowl, mix together flax, ground sesame seeds, baking powder, and salt. Use a whisk to stir until well combined.
  3. In another bowl, beat eggs with a mixer for 30-60 seconds. Add water and olive oil, mixing until combined.
  4. Add wet ingredients to dry and stir until combined. Let the batter sit for 1-2 minutes to thicken slightly.
  5. Pour batter into loaf pan and smooth out the top with a spoon. Bake for about 40-50 minutes, or until the top feels set and the loaf is browned.
  6. Once cooled, slice and store in the fridge or freezer.

Notes:

Seeds go rancid when ground, after exposure to air and light. To ensure freshness, simply grind whole flax seeds and sesame seeds in your blender or Magic Bullet. They don't need to be finely ground at all. If you have any leftover, store them in the fridge or freezer.

    This is excellent! I would cut back a bit on the salt. For a makeover, I would use sweetener instead of salt and eat it with a bit of cream cheese. 🤗👍
