Oatmeal Chocolate Chip Waffles

These gluten- and dairy-free Oatmeal Chocolate Chip Waffles are crispy on the outside, fluffy on the inside, and are absolutely delicious!

Ingredients


2 cup Oat flour
2 tbsp Coconut flour
2 tsp Baking powder
1 pinch Salt (sea)
1 large Banana (s) (large; mashed)
1/4 cup Coconut oil (melted, plus more for waffle maker)
1 large Egg (large)
1 cup Almond milk, vanilla, unsweetened, Silk (plus more as it thickens)
1 tsp Vanilla extract, pure (tsp)
1/4 cup Dark chocolate chips (Enjoy Life Mini Chocolate Chips)

Instructions


  1. Combine oat flour, coconut flour, baking powder and salt in a large bowl.
  2. In a separate bowl combine banana, coconut oil, egg, almond milk and vanilla.
  3. Add wet ingredients to dry and stir to combine. Stir in chocolate chips. Let mixture sit for 5 mins.
  4. Heat up waffle maker and spray or brush with coconut oil.
  5. Add additional almond milk to mixture if too thick (no more than a 1/4 cup).
  6. Add a 1/3 cup of batter to your waffle maker and cook according to waffle maker instructions.
  7. Repeat until all batter is used – will make 4-5 waffles depending on size of waffle maker.
  8. Serve immediately with maple syrup, nut butter or toppings of choice.
  9. Let cool and freeze if not eating immediately.

Notes:

Tip:

To make this recipe vegan, replace the egg with a flax "egg":

  • Flax Egg: Mix one tablespoon of ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set and thicken.

  • Nut butter
  • Meal Garden's Tahini-tella chocolate spread 
  • Greek or dairy-free yogurt
  • Fresh or thawed frozen berries
  • Canned peaches or pears
  • Meal Garden's Raw Chia Berry Jam
  • Shredded unsweetened coconut
  • Walnut or pecan halves, or almond slivers
  • Hemp, chia, or cracked flax seeds
  • Maple syrup or raw honey
