Making overnight oats is a quick and easy way to incorporate a filling breakfast into your busy mornings.
Ingredients
1/2 cup
Rolled oats, dry
(gluten-free)
1/2 tsp
Cocoa powder, unsweetened
2 tbsp
Flaxseed meal (ground)
2/3 cup
Almond milk, unsweetened
(or milk of choice)
2/3 cup
Frozen raspberries, unsweetened
(or fresh)
2 tbsp
Walnuts
(halves or crushed; optional)
Instructions
Combine the cocoa powder, rolled oats, and flaxseed meal in a glass mason jar or glass storage container.
Add in almond milk (or milk of choice).
Gently mix ingredients until evenly incorporated.
Secure the lid and leave oats in the fridge overnight.
In the morning, remove from fridge and top with raspberries (or any other berry/fruit of choice) and walnuts. Oats can be eaten cold directly from the fridge or remove the lid and reheat in the microwave (add the fruit and nuts after microwaving).
Notes:
Texture modifications for stroke recovery:
If a softer smoother texture is required, omit the walnuts. In a food processor, process all ingredients until smooth. Then, pour into a mason jar and refrigerate overnight.
