1 tbsp Olive Oil, Extra Virgin
681 gm Beef, chuck, blade (boneless; cut into cubes)
3 cup Bone broth, Organic
4 medium Carrots (chopped)
1 medium Yellow onion (diced)
908 gm Red potato (chopped*)
3 clove(s) Garlic (minced)
454 gm Cremini (Italian) mushroom (chopped)
2 tbsp Coconut aminos, Coconut Secret (or compliant Worcestershire))
2 tbsp Tomato paste, canned
1 tsp Oregano, dried
2 tsp Thyme, dried
2 tsp Paprika
1 tsp Salt (sea)
1/2 tsp Black pepper
1 tbsp Rosemary, dried (or fresh!)

Instructions


  1. Heat a saute pan with the olive oil and brown the beef chuck until evenly browned on all sides.
  2. Add the browned beef to the slow-cooker with the bone broth, carrots, onion, potatoes, garlic, mushrooms, Coconut Aminos, tomato paste, and all of the seasonings except the fresh rosemary. Stir everything together.
  3. Cook the stew on low for 8 hours, adding in the rosemary during the last 20 minutes.
  4. Serve with additional fresh rosemary on top. Enjoy!
