Paleo Rooibos Chai Latte [BR]
In this Latte recipe, the traditional milk is swapped with coconut milk to capture a similar creaminess that melds perfectly with the warm spices.

Ingredients


1 can(s) (13.5 oz) Coconut milk, sweetened
5 pods Cardamom pods
4 Rooibos Tea, brewed (bags)
1 stick(s) Cinnamon
1 piece, 1-inch Ginger root (peeled and sliced)
2 ml Star anise (pods)

Instructions


  1. In a small saucepan over medium heat, add coconut milk and heat until warmed through and steaming.
  2. Add remaining ingredients, turn off the heat, cover the pot with foil or a lid, and steep chai tea for 6 minutes.
  3. Strain solids through a mesh strainer.
  4. Divide the mixture between 2 mugs, and serve warm.
