125 gm Atlantic salmon, wild
3 tbsp Panko bread crumbs
1 tbsp Dijon mustard
1 tbsp Mayonnaise, low fat
1 tsp Extra virgin olive oil
1 dash Salt and pepper
100 gm Mixed vegetable salad

Instructions


  1. 1. Pre-heat oven to 350 degrees F.
  2. 2. Arrange salmon fillets skin-side down on baking dish or sheet pan (lined with foil for easy clean up) and season with a little salt and pepper.
  3. 3. In a small bowl, mix together mayonnaise and dijon in a small bowl and spread over salmon fillets.
  4. 4. In another small bowl, mix together panko and olive oil with a fork and sprinkle over mustard mixture, spreading panko over the entire fish.
  5. 5. Bake fish for about 15 minutes, until cooked through. If breadcrumbs aren’t golden brown, then broil  for 1-2 minutes, just until golden brown.

Serve with veggies of choice
