1. In a small medium sized serving bowl, combine the bell pepper, tomatoes and olives.
2. In a small bowl, stir together the oil and lemon juice.
3. Pour this dressing over the vegetables.
4. Season with salt and pepper to taste and sprinkle with parsley.
