1 1/3 kg Pork chop, loin centre cut, bone-in, lean (4-12oz chops (uniform in size))
2 tsp Himalayan sea salt (or to taste)
1 tsp Black pepper (or to taste)

Instructions


  1. Preheat oven to 275*F. Place baking rack into lined baking sheet and set aside.
  2. Pat chops dry with paper towel. Season with salt and pepper on all sides, place on baking rack. 
  3. Bake in preheated oven until internal temperature reaches 120-125*F. Remove from oven and begin preheating heavy-bottomed skillet over medium heat (cast iron is best).
  4. Once skillet is sufficiently hot, increase temperature to medium-high, and add enough avocado oil to coat the skillet. 
  5. Brown the chops on all sides until the fat is rendered and internal temperature reaches 160*F.
  6. Remove from skillet, tent with foil, and allow to rest for 10 minutes. Serve with chimichurri or on their own.
