These Pineapple Salsa Chicken Tacos are easy to make, and are perfect for a quick weekday dinner, especially when using precooked chicken.

Ingredients


2 cup diced Pineapple
1/2 cup Red onion (diced)
1/4 cup Cilantro (coriander) (chopped)
2 whole lime(s) Lime juice (fresh)
1 pinch Salt
1 cup Chicken breast, boneless, skinless, grilled (use precooked chicken pieces)
4 medium tortilla(s) Whole wheat tortilla

Instructions


1. To make the salsa, mix the diced pineapple, onion, cilantro, lime juice, and salt together in a medium-sized bowl.

2. Heat up the pre-cooked chicken breast pieces, or carve pieces from a store-bought pre-cooked chicken.

3. Line the centre of each tortilla with an equal amount of chicken. Top each with an equal amount of the pineapple salsa.

Notes:

Alternatives: Try making with fish, turkey, or beef.

Vegetarian option: Try lentils, beans, cubed tofu, cubed tempeh, or mock meats in place of the chicken.

Additional flavour: Top with cilantro, parsley, or green onions.
