Pizza quesadilla comes with all the flavors of your favorite Italian dish in an easy-to-eat quesadilla form.
Ingredients
2 medium tortilla(s)

Whole wheat tortilla
|
1/2 cup
|
Mozzarella cheese
(shredded low-fat)
|
1/2 cup
|
Tomato pizza sauce, canned
|
1/4 cup
|
Green bell pepper
(diced)
|
1/4 cup
|
White mushrooms
(diced)
|
1/4 cup
|
Red onion
(diced)
|
1 tbsp
|
Extra virgin olive oil
|
1/2 tsp
|
Garlic powder
|
1/4 tsp

Italian herb seasoning

Instructions
- Preheat a large skillet or griddle over medium heat.
- Place one of the tortillas on the griddle.
- Spread the pizza sauce evenly over the tortilla.
- Top with the shredded cheese, bell pepper, mushrooms, and onion.
- Place the remaining tortilla on top of the toppings.
- Drizzle the olive oil over the top tortilla.
- Sprinkle the garlic powder and Italian seasoning over the top.
- Cook for 3-4 minutes, until the cheese, is melted and the bottom tortilla is golden-brown.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes, until the other side is golden-brown.
- Cut into quarters and serve warm. Enjoy!
- Serve with a side of dipping sauce of plain greek yogurt, guacamole, or salsa
Notes:
1. Make sure to use low-fat cheese to keep the fat and calorie content of the quesadilla as low as possible.
2. Substitute a vegetable-based pizza sauce for the traditional tomato-based variety to increase the nutrition content.
3. For extra flavor and nutrition, add some chopped fresh herbs to the quesadilla such as basil or oregano.
4. For a healthier version, use whole-grain tortillas instead of white flour.
5. Add some extra diced vegetables for more nutrition and color.
