Pizza quesadilla comes with all the flavors of your favorite Italian dish in an easy-to-eat quesadilla form.

Ingredients


2 medium tortilla(s) Whole wheat tortilla
1/2 cup Mozzarella cheese (shredded low-fat)
1/2 cup Tomato pizza sauce, canned
1/4 cup Green bell pepper (diced)
1/4 cup White mushrooms (diced)
1/4 cup Red onion (diced)
1 tbsp Extra virgin olive oil
1/2 tsp Garlic powder
1/4 tsp Italian herb seasoning

Instructions


  1. Preheat a large skillet or griddle over medium heat.
  2. Place one of the tortillas on the griddle.
  3. Spread the pizza sauce evenly over the tortilla.
  4. Top with the shredded cheese, bell pepper, mushrooms, and onion.
  5. Place the remaining tortilla on top of the toppings.
  6. Drizzle the olive oil over the top tortilla.
  7. Sprinkle the garlic powder and Italian seasoning over the top.
  8. Cook for 3-4 minutes, until the cheese, is melted and the bottom tortilla is golden-brown.
  9. Carefully flip the quesadilla and cook for an additional 3-4 minutes, until the other side is golden-brown.
  10. Cut into quarters and serve warm. Enjoy!
  11. Serve with a side of dipping sauce of plain greek yogurt, guacamole, or salsa

Notes:

1. Make sure to use low-fat cheese to keep the fat and calorie content of the quesadilla as low as possible.

2. Substitute a vegetable-based pizza sauce for the traditional tomato-based variety to increase the nutrition content.

3. For extra flavor and nutrition, add some chopped fresh herbs to the quesadilla such as basil or oregano.

4. For a healthier version, use whole-grain tortillas instead of white flour.

5. Add some extra diced vegetables for more nutrition and color.
