These pancakes are made with nutrient dense green plantains so they won't spike your blood sugar like regular flour pancakes!
Ingredients
2 plantain(s)
Plantain, green, raw
(green)
4 large
Egg
3 tbsp
Coconut oil
2 tsp
Vanilla extract, pure
1/2 tsp
Baking soda
1 dash
Salt
1 tbsp
Coconut oil
(for frying)
Instructions
Peel plantains and add them to a high-speed blender with eggs, coconut oil, vanilla extract, baking soda, and salt, and blend until smooth.
Heat griddle or cast iron pan to medium-high heat and add coconut oil to the pan. Using a 1/4 cup measure, ladle out the batter into the pan to make pancakes even in size.
Allow pancakes to cook for 3-5 minutes on the first side. When pancakes have a few bubbles and appear dry on top, flip and cook an additional 1-2 minutes.
Repeat until you finish the batter. Garnish with your favorite fruits and nuts.
Notes:
Quick Tips
This batter also works well as waffles. Use 1/2 cup of batter instead of 1/4 cup.
