114 gm Pork, tenderloin, lean
3/4 tbsp Sesame oil
1/2 cup Chicken broth (stock), low sodium
2 clove(s) Garlic (minced)
1 tsp Ginger root (fresh; (grated)
2 tbsp Brown sugar
1/2 tbsp Soy sauce
1 tsp Cornstarch
1 tsp Rice wine vinegar
1/4 tsp Red pepper flakes (crushed)
1/2 cup Brown rice, medium-grain, cooked
1/2 fruit Lime (juiced)
1/4 cup Cilantro (coriander) (roughly chopped)
1 cup Spinach
1 large Carrots
1 cucumber(s) Cucumber (large)
1 medium Egg
1 tsp Sesame seeds (for garnish)
1 tbsp Green onion (chopped; (for garnish))

Instructions


  1. Begin boiling a small pot of water for eggs.
  2. Heat sesame oil in a skillet over medium-high heat. Add pork and cook until browned on all sides, about 6-8 minutes.
  3. In a small bowl, whisk together chicken stock, garlic, ginger, brown sugar, soy sauce, cornstarch, rice wine vinegar, and crushed red pepper flakes. Set aside. Peel the carrot and cut into ribbons. Thinly slice the cucumber.
  4. When pork is almost done, add eggs to boiling water. Boil for 6 minutes. Remove from heat and run under cold water to stop cooking. Peel.
  5. Cook rice to liking. Add lime juice and cilantro. Mix well.
  6. When pork is done cooking, remove it from the skillet and set it aside. Add chicken stock mixture to skillet and bring to a boil. Reduce heat and simmer 2-3 minutes until the mixture thickens. Return pork to sauce. Toss until well coated.
  7. To assemble the bowls, add rice to the bottom of a serving bowl. Add cup spinach, carrots, and cucumbers. Top with pork mixture, and one whole egg, sliced in half. Garnish with sesame seeds and scallions.
