8 potato Red mini potato (4 cups cooked mashed)
1 cup Gluten free flour (Bobs Red Mill baking flour 1:1)
1 tbsp Olive Oil, Extra Virgin

Instructions


Cook potatoes until fully cooked but ensure they are not overcooked. Mash and cool in fridge.

When cool place in bowl , add baking flour and mix until fully incorporated, then add olive oil and incorporate

Add flour and olive oil as needed to achieve desired consistency
