681 gm Pork shoulder, whole, lean
1 tsp Salt
5 tbsp Extra virgin olive oil, garlic-infused
1 medium pepper(s) Jalapeno pepper (chopped)
1 tsp Oregano, fresh (chopped)
1 tsp Coriander, ground
3/4 tsp Paprika, smoked
1/2 tsp Black pepper
1/2 tsp Cumin
1/4 tsp Marjoram (fresh; chopped)
1 1/4 tsp Salt
1 whole lime(s) Lime juice (fresh) (or lemon)
5 large leaf Lettuce, butterhead (Boston) (or romaine)

Instructions


  1. Put the pork shoulder in the crockpot, pressing salt into both sides, and cook on low overnight.
  2. Remove pork from crockpot and put in the fridge for a few hours, or until the fat hardens.
  3. Remove the fat from the meat and pull the meat apart into shredded pieces.
  4. Heat skillet on medium-high heat, then add the garlic-infused oil and the shredded meat. Stir to combine.
  5. Add the diced jalapeno pepper, oregano, coriander, paprika, black pepper, cumin, marjoram, and salt. Stir to combine.
  6. Sauté until the meat starts to brown, then remove from heat and add the fresh lime juice.
  7. Serve seasoned pulled pork in a lettuce shell with any toppings of your choice. Enjoy!
