3 1/4 cup Vegetable stock/broth
1 medium Yellow onion
2 clove(s) Garlic
600 gm Pumpkin
1 medium stalk(s) Celery
1/2 cup Quinoa, uncooked
1 pinch Salt and pepper

Instructions


In a large pot add together the veggies and the quinoa, then the stock.


Simmer for 60 minutes.


Optional to blend for a minute to make it smoother.


Serve and enjoy!
