1 cup | Pumpkin seeds (pepitas) |
1/3 cup | Sesame seeds |
1/2 cup chopped | Zucchini (shredded, packed) |
1/4 tsp | Sea Salt (to taste) |
1 tbsp | Extra virgin olive oil |
1. Preheat the oven to 350F degrees.
2. In a food processor, grind the pumpkin seeds until they become a fine meal. Add the sesame seeds, zucchini, salt and olive oil, and pulse until everything comes together.
3. Place the dough onto a silpat or parchment paper, and roll out the crackers thinly. Score with a knife into 1.5-2 inch squares.
4. Bake for 15 minutes, then allow the crackers to cool completely before breaking them apart.
