Quick Low Carb Omelette

This is delicious drizzled with my easy hollandaise sauce :)

Ingredients


2 large Egg
1 tbsp Heavy cream, 38% M.F.
1 tsp Extra virgin olive oil
1 cup Baby spinach
1/2 cup, shredded Cheddar cheese, sharp (or whatever cheese you prefer)

Instructions


  1. Heat oil in a small frying pan.
  2. Meanwhile, mix eggs with heavy cream and salt and pepper, in a bowl and add to hot frying pan.
  3. On one half of the egg mixture, place spinach and cheese.
  4. Cook for a few minutes until the egg is firm enough to gently lift.  Fold the 'plain' half over the top of the spinach/cheese half.
  5. Cook a few minutes more to allow the cheese to melt.
  6. Place on plate and drizzle with hollandaise sauce (optional).

Notes:

Use other veggies if you like.
