Easy Asian salad, loaded with fresh vegetables, quinoa, cashews, and sesame seeds in a Sesame Ginger dressing. Add chicken or pork for added protein.
Ingredients
1 cup
Quinoa, cooked
(cooked)
6 cup shredded
Red cabbage
(red or green)
1 cup grated
Carrots
(shredded)
1/3 cup
Cashew nuts, salted
(chopped, toasted))
1 tbsp
Sesame seeds, black
((toasted))
2 green onion (stem)
Green onion
((sliced, keep green and white separated))
Instructions
In a large mixing bowl, combine CABBAGE, cooked QUINOA, CARROTS, CILANTRO, CASHEWS, SESAME SEEDS, and GREEN ONIONS (whites); cover and refrigerate until ready to dress with vinaigrette.
In a mixing bowl or glass, whisk together RICE VINEGAR, GINGER, GARLIC, AGAVE, SALT, and PEPPER.
Slowly drizzle in the OLIVE OIL and SESAME OIL, continually whisking until well-blended and creamy.
Cover and refrigerate until ready to use; garnish with GREEN ONION (green part).
