2 cup | Quinoa, cooked |
2 cup | Frozen spinach |
1 bunch | Kale (chopped) |
1 medium | Yellow onion (diced) |
3 medium | Egg (beaten) |
1 tsp | Spirulina powder |
1 dash | Black pepper (other spices to taste) |
1/2 cup shredded | Dairy-free cheddar cheese shreds, Daiya |
1. Preheat oven to 425 degrees.
2. Sauté onion, spinach and kale until onions are translucent and spinach and kale are wilted. Mix green veggie mixture with all other ingredients. Roll into balls and place on cookie sheet lined with parchment paper or sprayed with cooking spray.
3. Bake in oven for 30 minutes.
4. Serve over greens or brown rice noodles or eat as appetisers.
