Ingredients


1 can (15oz) Chickpeas, canned, drained
1 avocado(s) Avocado (sliced)
1 1/3 cup Beets, raw (shredded)
1 1/3 cup Fennel (finely chopped/sliced)
2 cup Quinoa, cooked
1/2 cup Kalamata olives (sliced)
8 cup Lettuce, spring mix (mesclun)

Instructions


Assemble the salad:

  • Add the shredded veggies to a medium bowl and drizzle with salad dressing of your choice (see salad dressing categories)
  • Divide salad into 6 jars.
  • Top with veggies, then add avocado, olives, chickpeas, and additional veggies of your choice.
  • Top with a tight-fitting lid and refrigerate until ready to eat.
  • The salad can be made the night before, and it will keep for several days in the fridge.
